Baltimore Eggnog

 30ml Rum
 30ml Madeira
 60ml Cream

Shake over ice in a boston. Strain into a highball, dust with the nutmeg.

We had this last Christmas and it was a hit- it's very easy and quick to build, so you can make as little or as much as you need with no waste. It's got madeira in it, which is a sure-fire conversation starter.

60mls pisco
60mls apple juice
15mls lemon juice
5mls Monin passionfruit syrup

Tequila is both the name of Mexico's national drink, and a town in the Mexican state of Jalisco.
Pisco is the national drink of Peru.

The 'Jalisco' is traditionally made with Tequila, but I find Pisco much smoother, hence the 'Pisco Jalisco'

Rhapsody in Red

Glass: Red wine glass
Garnish: Lime wedge

60ml Vodka
30ml Dry Red Wine
30ml Lime Juice
5ml Monin Passionfruit syrup
teaspoon St Dalfour Raspberry Jam
splash of Chambord

Half fill a Red wine glass with ice and put the lime wedge and straws into it.

Shake all ingredients except the Chambord over ice and pour into the wine glass. Splash the Chambord liberally on top.

I've used a Pepperjack Shiraz as the wine base for a dry, spicy drink. Replace the red wine with a rose' or a sweet white (I've used Happs Late Picked Semillon for sheer deliciousness) and you have a "Rhapsody in Pink" or "Rhapsody in White" respectively.

Inspired by a creation from Kazuki Gato, Hard Rock Cafe mixologist and BARocker 2015 Champion.

Mango Passionfruit Frozen Daiquiri

Glass: Highball
Garnish: Mango stick or orange slice

120mls bacardi White rum
60mls lime juice
30mls Monin Passionfruit Syrup
One frozen mango

Drop  all ingredients into a blender and blend until smooth. Pour into two glasses and garnish.

Prior preparation required: cut up the mango and freeze it in a sandwich bag. this way the drink is about the consistency of a frozen smoothie or thick shake, it is cold and there is less mess when you make the drinks.

This recipe serves 2.

Planter's Punch

Glass: Collins
Garnish: A straw

75mls Bacardi or dark rum if you prefer
30mls Fresh Lime Juice
30mls Lime cordial
60mls Soda Water
2 dashes of Angostura bitters

Combine the rum, juice and cordial with plenty of ice and shake vigorously. Dump the ingredients, ice and all, into the collins glass, top with soda and bitters and stir it with a straw.

There are plenty of recipes around for this old drink. This is my favourite because it is quick and easy, unpretentious, and it fits perfectly into a 14 oz (414mls) or 16 oz (473mls) collins glass.

Ruby Daiquiri

Glass: Martini
Garnish: Ruby red grapefruit peel

60ml white rum
30ml fresh ruby red grapefruit juice
15ml maraschino liqueur
15ml lime juice

Shake all ingredients over ice.

This is a variation on the 'Hemingway Daiquiri' or 'Hemingway Special' as it is sometimes known. One ruby red grapefruit should make two of these, so if you are drinking with a friend it is convenient to cut the grapefruit in half and then make two straight away, eliminating any waste of the fruit.

Mai Tai

Glass: Highball or Collins
Garnish: pineapple wedge, cherry. mint leaf, speared on a toothpick and railed on the glass edge

30mls Bacardi white rum
30mls dark rum
15mls Cointreau
15mls Amaretto
15mls lime juice
15mls orange juice

Half-fill a tall glass with ice. squeeze the juice of one fresh lime (around 15mls, give or take) and run the peel around the rim of the glass. Pour in the other ingredients, and stir vigorously. garnish and serve with straws.

This is three full shots of alcohol, so it really packs a punch. For a longer drink, serve with more ice and top with some cold pineapple juice and a dash of grenadine for a 'Mai Tai Sling'.

Blood and Sand

glass: martini
garnish: nope

45mls scotch
15mls sweet Vermouth
15mls cherry heering
45mls orange juice

shake over ice and serve. Play with the proportions on this one. Everyone has slightly different tastes. Personally I like the taste of scotch so I tend to 'cheat' the drink a bit to taste the scotch in it, but the clincher is in the quantity of cherry heering- a dash too much and you have a cherry flavoured drink.

Singapore Sling

glass: collins
garnish: maraschino cherry and a pineapple piece skewered on a toothpick

45mls gin
15mls cherry heering
7mls cointreau
7mls benedictine
120ml pineapple juice
15mls lime juice
a dash of grenadine
a dash of bitters

shake thoroughly over ice for a big, frothy pink effect and strain it into an ice-filled collins. Most recipes call for more grenadine, but I suggest going very easy at first because the grenadine will very quickly overpower the rest of the drink in both colour and flavour. Note also that this is a very big drink! it won't fit into a highball glass, so unless you are happy with leftovers or making multiples, make sure you have a proper collins glass or something pretty big to serve it in, because you don't want to skimp on the ice and end up with a 'limp' sort of beverage.
